Ingredients:

  • 500 g minced meat (a mixture of lamb and beef or lamb)
  • 1 large onion, finely chopped
  • 1 Tbsp. of  fresh ginger
  • 4 cloves of  garlic, finely chopped
  • 1 chili pepper, finely chopped
  • 6 mint leaves, finely chopped
  • small bunch of fresh coriander
  • 1 egg
  • 2 slices of fresh bread, crumbled
  • salt to taste
  • 1 tsp. spices for meat (baharat lyahma) – a mixture of cloves, cardamom, cumin, cinnamon
  • 1 Tbsp. melted butter or olive oil for greasing the hands

Spices for oil (for frying):

  • 1 tsp. cumin seeds
  • 2 cloves garlic
  • 4 cardamom pods
  • 3 cm of  cinnamon sticks

Preparation:

Place garlic, ginger, mint, coriander leaves, chilli and spices  in a deep bowl and grind.

Add egg and mix everything well.

Put the minced meat in a large bowl, add bread crumbs,  onion and spices.

Salt to taste. Mix well and leave in the refrigerator in an airtight container for 4-6 hours.

Grease hands with butter or oil with water and shape into sausages, – you can put stuffing in the middle of the skewers.

Heat the oil in a pan, add spices for frying. Leave them in oil for a few seconds.

Then fry the kebabs  until golden brown.

Serve with a salad of fresh tomatoes,onions and sauce for barbecue.
